Counter-Strike does not provide country information.

You could put the country in the 'Comment' box, and then add it to LGSL using {$server['o']['comment']}

To let you know, I am adding country flags in 5.8

Player IP is not given. What you see on the details page is ALL that is returned. You need a RCON script, which can login with the admin password to get IPs.
